γ-氨基丁酸在食品中的应用研究进展

    • 摘要: γ-氨基丁酸(GABA)属于一种氨基酸衍生物,广泛分布于动植物和微生物中,是哺乳动物中枢神经系统抑制性神经递质,具有多种生理功能。综述了GABA的制备方法、应用范围、有益人体健康的生理功能、富集原理以及富含GABA的茶、豆制品、谷物、乳制品、果蔬等功能性食品的研究现状,并对GABA的应用前景进行了展望。可以采用特定的处理提高食品中GABA的含量,或将GABA作为生物活性化合物开发新的功能性产品,市场前景十分广阔。

       

      Abstract: Gamma-aminobutyric acid (GABA), widely distributed in plants, animals, and microorganisms, is a kind of amino acid derivatives and an inhibitory neurotransmitter of the mammalian central nervous system. As a novel functional factor, GABA has a variety of beneficial physiological functions. This paper reviewed the preparation methods, application scope, health-related physiological functions, enrichment principles and the current research status of GABA-related functional foods, involving GABA teas, bean products, cereals, dairy products, fruits and vegetables, etc., and was expected to provide a basis and reference for further research and development of GABA rich functional foods. Therefore, as a kind of bioactive compound food additives or being after specific pretreatment to increase the content in food, GABA is very promising to be used in developing new functional products.
