乳杆菌表层蛋白理化性质与生物功能的研究进展

    Advances in research on physicochemical properties and biological functions of Lactobacillus surface layer proteins

    • 摘要: 许多乳杆菌外表面都包裹着一层蛋白质,即为表层蛋白,氯化锂、盐酸胍和尿素等高浓度的解离剂可从菌体表面剥离表层蛋白。乳杆菌表层蛋白等电点偏碱性,分子质量25~71 kDa,来源不同的蛋白结构组成差异较大。乳杆菌表层蛋白对其菌体的表面性质、胃肠道耐受性、黏附与定植都有积极的影响,还可协助乳杆菌抑制致病菌的感染,减少病原菌感染引起的细胞凋亡。乳杆菌表层蛋白独特的理化特性和良好的益生功能使其在食品和医药领域有着较为广泛的应用。着重综述了乳杆菌表层蛋白结构性质、制备方法、生物学功能、应用等方面的研究进展,为乳杆菌表层蛋白进一步的研究提供有价值的信息。

       

      Abstract: Many Lactobacillus outer surfaces are covered with a layer of protein called surface layer proteins.Surface layer proteins can be extracted from the surface of the cells by high concentration dissociation agents such as lithium chloride, guanidine hydrochloride and urea.The isoelectric point of Lactobacillus surface layer proteins is alkaline, the molecular weight is 25-71 kDa, and the protein structure and composition are various when the source is different.The surface layer proteins of Lactobacillus have positive effects on the surface properties, gastrointestinal tolerance, adhesion and colonization of the cells.They can also assist the Lactobacillus to inhibit the infection of pathogenic bacteria and reduce the apoptosis caused by pathogenic bacteria infection.Lactobacillus surface layer proteins have unique physicochemical properties and promising probiotic functions, facilitating their wide applications in food and medicine.This review focused on the research progress of the structural properties, preparation methods, biological functions and applications of Lactobacillus surface layer proteins, and provided valuable information for further study on Lactobacillus surface layer proteins.
