Abstract:
This study investigated the effects of water content and environmental humidity on the storage characteristics of corn germ. The lipid oxidation of corn germ oil was analyzed, and the changes of V
E, phytosterol and zearalenone content were also studied. The results showed that at the end of 50 d storage, the acid value of oil in corn germ with water content of 5% and 9% scarcely changed, with the increase of 31.06% and 37.45%, respectively, while the acid value of oil in corn germ with high water content(12%) increased significantly by 1.9 times.The peroxidation value of oil produced by corn germ with water content of 9% and 12% was more than 3 times that of germ with water content of 5%. Water content , higher than 9%, remarkably accelerated the decrease of V
E and phytosterol content and the increase of zearalenone content. In addition, when the environmental humidity was greater than 50%, the peroxidation value of corn germ oil increased significantly. And the environmental humidity in the range of 30%-50% could maximally inhibited the increase of zearalenone content of corn germ, as well as the decrease of V
E, and phytosterol content. The recommended safe storage conditions for corn germ were: the water content is less than 9% and the environment humidity in the range of 30%-50%.
