玉米胚芽贮藏期水分含量及环境湿度对玉米胚芽油品质的影响

    Effect of moisture content of corn germ and environmental humidity during storage on the quality of corn germ oil

    • 摘要: 玉米胚芽贮藏稳定性受自身水分含量及环境湿度的影响显著,从而影响玉米胚芽油的品质。以不同水分含量和不同环境湿度贮藏的玉米胚芽为原料制备玉米胚芽油,分析了玉米胚芽油的脂质氧化情况,VE、植物甾醇营养物质的变化情况,以及玉米赤霉烯酮含量增加的程度。结果表明:贮藏50 d,水分含量为5%和9%的玉米胚芽所制油脂的酸值变化较小,仅分别增加了31.06%和37.45%,而高水分含量(12%)玉米胚芽所制油脂的酸值显著增加了1.9倍;水分含量为9%和12%的玉米胚芽所制油脂的过氧化值是水分含量5%的玉米胚芽的3倍以上;水分含量高于9%会显著加速玉米胚芽油中VE和植物甾醇含量的降低,以及玉米赤霉烯酮含量的升高。此外,贮藏环境湿度大于50%会显著加速玉米胚芽油过氧化值的升高;当贮藏环境湿度在30%~50%时可以最大限度地抑制玉米赤霉烯酮含量的升高,以及胚芽油中VE、植物甾醇含量的下降。因此,玉米胚芽的安全贮藏条件:水分含量低于9%,环境湿度为30%~50%。

       

      Abstract: This study investigated the effects of water content and environmental humidity on the storage characteristics of corn germ. The lipid oxidation of corn germ oil was analyzed, and the changes of VE, phytosterol and zearalenone content were also studied. The results showed that at the end of 50 d storage, the acid value of oil in corn germ with water content of 5% and 9% scarcely changed, with the increase of 31.06% and 37.45%, respectively, while the acid value of oil in corn germ with high water content(12%) increased significantly by 1.9 times.The peroxidation value of oil produced by corn germ with water content of 9% and 12% was more than 3 times that of germ with water content of 5%. Water content , higher than 9%, remarkably accelerated the decrease of VE and phytosterol content and the increase of zearalenone content. In addition, when the environmental humidity was greater than 50%, the peroxidation value of corn germ oil increased significantly. And the environmental humidity in the range of 30%-50% could maximally inhibited the increase of zearalenone content of corn germ, as well as the decrease of VE, and phytosterol content. The recommended safe storage conditions for corn germ were: the water content is less than 9% and the environment humidity in the range of 30%-50%.
