Abstract:
Carotenoids are a kind of important natural pigments. Some of them can spontaneously aggregate in hydrated organic solvents, thus presenting different forms of existence, such as H aggregates, M monomer and J aggregates. Six typical carotenoids, lycopene, lutein, zeaxanthin, astaxanthin, β-carotene and fucoxanthin, were represented in this paper. The formation mechanism, influencing factor, research methods and potential applications of carotenoid aggregates were introduced. It is expected to provide a reference for research and application of carotenoid aggregates in food, medicine and biology field in future.
