Abstract:
Nanotechnology, as an emerging and rapidly developing research field, has found wide applications in food processing, packaging, and detection. The use of nano-carriers for the nutrient delivery of bioactive compounds is currently a hotspot, especially with respect to delivery systems utilizing proteins and polysaccharides to prepare nanoparticles. This paper reviews the research status, formation mechanism, influencing factors, and the applications in food of nano-carriers constructed from the biological macromolecules of polysaccharides and proteins. It provides a reference for research and applications of polysaccharide-protein nano-carriers in field such as food, biology, and medicine in the future.
