多糖-蛋白质纳米载体研究进展

    Research progress in polysaccharide-protein nanocarriers

    • 摘要: 纳米技术作为一个新兴的、快速发展的研究领域,在食品的加工、包装和检测等方面得到了广泛的应用。利用纳米载体对生物活性化合物进行营养递送是目前研究的热点,特别是利用蛋白质和多糖制备纳米颗粒的递送系统。对生物大分子多糖-蛋白质构建的纳米载体的研究现状、形成机理、影响因素以及在食品中的应用进行了综述。为今后多糖-蛋白质纳米载体在食品、生物及医药等领域的研究与应用提供参考。

       

      Abstract: Nanotechnology, as an emerging and rapidly developing research field, has found wide applications in food processing, packaging, and detection. The use of nano-carriers for the nutrient delivery of bioactive compounds is currently a hotspot, especially with respect to delivery systems utilizing proteins and polysaccharides to prepare nanoparticles. This paper reviews the research status, formation mechanism, influencing factors, and the applications in food of nano-carriers constructed from the biological macromolecules of polysaccharides and proteins. It provides a reference for research and applications of polysaccharide-protein nano-carriers in field such as food, biology, and medicine in the future.
