抗性糊精制备工艺研究现状及在食品中的应用

    • 摘要: 抗性糊精是一种低分子量水溶性膳食纤维,具有调节血糖、改善肠道健康及促进脂质代谢等功能特性,通常由淀粉经酸热法或酶法等工艺制备而成。传统酸热法制备过程中存在能耗高、副产物多、产物色泽深等问题,制约了其生产方式向绿色低碳转型。综述了酸热法、酶法以及微波、超声、超高压等物理手段在抗性糊精制备中的研究进展,系统探讨了不同制备工艺的优缺点及其对抗性糊精结构与功能特性的影响,并总结了其在饮料、面制品、保健食品和肉制品等食品领域中的应用现状,以期为抗性糊精的绿色制备与高值化利用提供理论参考。

       

      Abstract: Resistant dextrin, a water-soluble dietary fiber with low molecular weight, possesses functional properties including the regulation of blood glucose, improvement of intestinal health and promotion of lipid metabolism. It is generally produced from starch by acid-heat treatment, enzymatic hydrolysis and other processes. The conventional acid-heat treatment suffers from drawbacks such as high energy consumption, abundant by-products and dark color of final products, which restricts the green and low-carbon transformation of its production modes. This review summarizes the latest research advances in the preparation of resistant dextrin using acid-heat treatment, enzymatic hydrolysis, and physical technologies including microwave, ultrasound and high-pressure processing. It systematically discusses the advantages and disadvantages of various preparation processes, as well as their effects on the structural and functional properties of resistant dextrin. Furthermore, the current applications of resistant dextrin in beverages, wheat flour products, health foods and meat products are summarized. This review aims to provide theoretical references for the green preparation and high-value utilization of resistant dextrin.
