Abstract:
The phospholipids in deoiled egg yolk powder was extracted from deoiled egg yolk powder using ethanol as extraction solvent.First,the ethanol concentration was selected,and then the effects of extraction time,material-liquid ratio,extraction temperature,stirring rate,and extraction times on the effect of ethanol extraction of crude egg yolk phospholipids were investigated through single-factor experiments.Next,the response surface experiments were designed to optimize the reaction conditions of the ethanol extraction of crude egg yolk phospholipids according to the Box-Behnken center combination experimental design principle,and the purity and extraction rate of phospholipids in the crude egg yolk phospholipids were the response values.The optimal reaction conditions were as follows:ethanol concentration 95%,extraction time 4 min,material-liquid ratio 1:5 g/mL,extraction temperature 65℃,stirring rate 168 r/min,and extraction twice.Based on the above parameters,the purity and extraction rate of phospholipids in the crude egg yolk phospholipids were 71.03% and 66.17%.
