Abstract:
Zearalenone (ZEN) is a secondary meatabolite mainly produced by Fusarium species,and one of the most common mycotoxins of grains.Its subsequent products pose considerable risk to humans and animals.Most of physical or chemical approaches are not widely available due to disadvantages of destruction of nutrients,incomplete detoxification,chemical residues and expensive cost involved in detoxification process.Microbiological detoxification would be the ideal way by which toxin was catalyzed into relatively less or even no toxic substances by microbial enzymes.Recent advances in biological detoxification of ZEN were summarized,including the species of microorganisms,enzymes,pathways and products involved in biological detoxification process,with an aim to provide a theoretical reference for further research on biological detoxification of ZEN.
