Abstract:
Soybean polypeptides are hydrolysate of soybean protein with excellent physical,nutritional,processing and physiological functions,and can promote mineral absorption,promote fat metabolism,reduce cholesterol,reduce blood pressure,enhance muscle capacity and other physiological functions. They have been widely used in food,medical and health products and feed additives. In this paper,the physical properties,nutritional characteristics,processing characteristics,physiological functions and research status of soybean polypeptides were reviewed,and the main problems in the research and application of soybean peptides were described.
