Abstract:
The physicochemical properties, composition, thermal properties and oxidative stability of fox oil were investigated for its utilization.The results indicated that the physicochemical properties of fox oil were accorded with the standard of edible animal oil.The contents of palmitic, oleic and linoleic acids were the main fatty acids in total fatty acid composition and the fatty acid at Sn-2.The total contents of saturated and mono-saturated fatty acids of fox oil were both significantly higher than that of Sn-2.However, the poly-unsaturated and total unsaturated fatty acid content of fox oil were both significantly lower than those of Sn-2.The content of triacylglycerol was about 99.2%, and monoacylglycerol was not found.According to the DSC curve, fox oil had many different triacylglycerols with different melting range.The monoacylglycerols of palmitic and stearic acid could favor the crystallization of fox oil.The predicted shelf-life of fox oil at 20℃was about 98 days by Rancimat.However, the predicted shelf-life of fox oil was about 908 days if 200 mg/kg TBHQ was added.
