果蔬中黄酮类物质的研究进展

    • 摘要: 果蔬营养物质丰富,含有多种对人体健康有益的成分,黄酮类物质是其重要的生物活性物质,能防治心血管疾病、抑菌、抗炎、抗氧化、抗肿瘤、抗癌及抗病毒等,对人体健康起着重要作用。与人工合成的多种防治人类疾病的物质相比较,黄酮类物质作为天然活性成分,在减少疾病风险时更具安全性。由于果蔬种类的多样性、果蔬营养基质的复杂性以及果蔬黄酮类物质的低量性,有关黄酮类物质低成本、低污染、高提取率、高效率的提取方法及简便、快速、准确、稳定的检测方法近年来得到了研究人员的广泛关注。综述了部分果蔬中黄酮类物质的作用、优化的提取工艺、检测技术及应用,旨在为果蔬中黄酮类物质的开发及综合利用提供依据。

       

      Abstract: Fruits and vegetables are rich in nutrients and contain various ingredients,which are beneficial to human health.Flavonoids are bioactive substances and they have several biological activities such as antibiosis,anti-inflammatory,antioxidant,anti-tumor,anti-cancer,anti-virus activities and can also prevent and treat cardiovascular disease,etc.Flavonoids,as natural active ingredients,are safer in reducing the risk of disease compared with synthetic substances for the prevention and treatment of human diseases.Flavonoids are difficult to extract and detect due to the diversity of fruit and vegetable species,the complexity of nutrient matrix and the low amount of flavonoids.In recent years,researchers have paid extensive attention to the extraction methods of flavonoids with low cost,low pollution,high extraction rate and high efficiency,as well as the detection methods with simple and rapid operation,high accuracy and stable quality.The physiological function,optimized extraction technology,detection techniques and application of flavonoids in some fruits and vegetables were introduced in detail in this paper,aiming to provide the basic theoretical foundation for the economic development and comprehensive utilization of flavonoids in fruits and vegetables.
