微生物抗菌肽在食品工业中的应用研究进展

    RESEARCH AND APPLICATION ADVANCES OF ANTIMICROBIAL PEPTIDES IN FOOD INDUSTRY

    • 摘要: 食品安全问题是全世界食品工业必须面对的重要挑战,而微生物污染是危害食品安全的主要因子之一。微生物抗菌肽具有高效、广谱、不易产生抗药性、体内可降解、易于规模化发酵生产等诸多突出优点,越来越为人们所关注,在食品工业和食品安全中发挥越来越重要的作用。对国内外微生物抗菌肽在食品工业中的应用研究进行总结,具体综述了微生物抗菌肽及其在食品原料安全控制、食品加工环节、食品防腐保鲜、食品活性包装等方面的应用研究。

       

      Abstract: In the past few decades,food safety is an important challenge with the rapid development of food industry worldwide,and nowadays microbial contamination is one of the dominant factors that threat food safety.The research of efficient bacteriostatic agents has become a hot topic in the food industry,and application of antimicrobial peptides (AMPs) has been considered to be an effective way to be used in the food industry.Due to the outstanding advantages of microbial AMPs,such as high efficiency,broad-spectrum,not susceptible to drug resistance,degradable in vivo and ease of large-scale production by fermentation,the research and application of microbial AMPs attract more attention,and microbial AMPs are expected to play a vital role in food industry as well as food safety.The present paper aims to summarizes the researches and applications of microbial AMPs in the food industry at home and abroad,and their applications in food raw materials safety control,food processing,food antisepsis and fresh preservation,food active packaging.
