    Status of Pulses Milling Methods and Application Value

    • Owing to high nutrition value,pulses are getting more and more attention.Pulses are high in protein but low in fat,which is in line with the health concept.There are many different kinds of pulses,and the treatment methods and products are various,and the pulses milling is one of the most important links.The different milling methods and physico-chemical properties of pulses are related to the functional characteristics,nutritive characteristics and acceptability of pulses products.This paper discussed the research progress of pulse milling methods,physico-chemical properties and application status of pulses and their products,it also discussed application status of pulses in many areas like staple food products,functional food and industrial production,in order to promote the development and utilization of pulses products.
