    RESEARCH AND APPLICATION ADVANCES OF ANTIMICROBIAL PEPTIDES IN FOOD INDUSTRY

    • In the past few decades,food safety is an important challenge with the rapid development of food industry worldwide,and nowadays microbial contamination is one of the dominant factors that threat food safety.The research of efficient bacteriostatic agents has become a hot topic in the food industry,and application of antimicrobial peptides (AMPs) has been considered to be an effective way to be used in the food industry.Due to the outstanding advantages of microbial AMPs,such as high efficiency,broad-spectrum,not susceptible to drug resistance,degradable in vivo and ease of large-scale production by fermentation,the research and application of microbial AMPs attract more attention,and microbial AMPs are expected to play a vital role in food industry as well as food safety.The present paper aims to summarizes the researches and applications of microbial AMPs in the food industry at home and abroad,and their applications in food raw materials safety control,food processing,food antisepsis and fresh preservation,food active packaging.
